In the Crock Pot

1 Pound Pinto Beans, soaked for a couple days.
1 large yellow onion, diced fine.
1 pound Pork Jowl bacon, diced into 1/2 inch hunks.

Letting that cook low and slow for hours (started at 0730 this morning.)  When done, I'll drain (keeping the liquid), return solids to the pot, and add:

1.5 cup ketchup
1/2 cup molasses
1/2 cup packed brown sugar
2 T dry mustard

Mix, add a little liquid back to keep it moist, and let THAT slow cook for a while.

Will be served with pork chops.

I anticipate a lot of leftovers, too.  And I'm OK with that.
